Roasted Grapefruit With Blueberries + Ice Cream

There’s a certain grocery store (let’s just say it rhymes with Mader Toe’s) whose produce never lasts as long as you want it to. And in this house, we eat produce pretty fast. Last week, just one day after buying a big bag of grapefruit, those poor little dudes didn’t look so hot. So I knew I needed to use them up asap.

Since I’ve really been into roasting peaches lately, I thought I’d try out my new lil’ roasting method on those grapefruits. As they were baking, it smelled all sorts of holiday in my house. Which felt a little too winter to include as a summer recipe, so I looked in my fridge to see how I could summer it all up. And I found some ice cream and blueberries…BOOM.

The ice cream and blueberries are optional, for sure. But I think it changes this simple dish from something you might eat at breakfast alone to something that you might be excited to serve at a party for dessert. And as this Chicago summer is starting to fade, I want to eat as many things with ice cream on top of them as possible.

Roasted-Grapefruit-Recipe

{ Roasted Grapefruit With Blueberries + Ice Cream } 
   serves 2

1 grapefruit, cut in half
2 teaspoons maple syrup, divided (use 1 teaspoon for each grapefruit half)
1 teaspoon cinnamon, divided (use 1/2 teaspoon for each grapefruit half)
Blueberries
Your favorite dairy-free ice cream (I went with coconut)

Preheat the oven to 375 degrees. 

Using a small knife, cut around the grapefruit and cut into each segment to make easier to eat after roasting. 

Drizzle 1 teaspoon of maple syrup over each side of the grapefruit. Sprinkle on the cinnamon. Gently rub the maple syrup and cinnamon on top of the grapefruit. 

Roast in the oven for 15-20 minutes until the maple syrup begins to caramelize and the grapefruit reaches the desired softness. Let cool for 10 minutes or until ice cream won’t completely melt when you put it on. 

Top each grapefruit with ice cream and blueberries.
